The Life of an Olive Tree

Not the harvest, not the oil — a whole journey.

On the skirts of the Kaz Dağları, above Yeşilyurt Village, an olive tree lives the year from the beginning. To remember it only by the harvest is to read just the last sentence of the story. The real matter is the seasons that pass before that sentence arrives.

On these pages we follow the olive's journey step by step: first the root that grips the earth, then the branch that carries the light, then the season that passes into the chef's hands, and finally AETHER's table reached by a single drop of oil. For Lov'Inn, the place where a plate begins is this often-invisible patience.

First

First, the root takes hold.

A century-old trunk stands upon an invisible patience. The root reads stone and clay soil for years; every flavour the tree will one day carry is first decided in this silent grip.

Then the branch carries.

From spring blossom to summer fruit, each branch shoulders a season. From green to purple, from purple to black; ripeness is in no hurry. Different times stand together on the same branch — and the right day quietly makes itself known.

First to the earth

The chef's hand knows the earth.

AETHER, a plate begins in the field before the kitchen. What the season gives — a handful of herbs, a mushroom just out of the earth, a fruit picked from the branch — is recognised in the chef's hand, then called to the table.

And at last

And it comes to the table.

After cold pressing, the essence of the earth remains: a clear, green, living oil. At the first table of the morning it touches bread at The Lov'Inn Table; in the evening it completes a plate in AETHER's seasonal kitchen. A whole year's patience finds meaning in a single drop.

The season passes, the tree remains. What stays at the table is the memory of a year.
